We aim to provide the thick 'stand a spoon up in it' double cream which so many of our customers enjoy. The final chilled consistency of the cream is influenced by a host of factors, some of which are out of our control, so please forgive us if there is sometimes a little variation when you open the pot. If you need a thicker cream, leave the pot open in the fridge overnight, and it will dry out a little. If you need to pour or whip it you may need to stir in a little of our organic milk first. Cream has had some bad press lately, but relax - current research is discovering that cream is beneficial to a happier state of mind - our bodies use the natural milk fat to soothe frayed nerves, and even the links with cholesterol levels are now being disputed.

The Dairy Council has copies of the relevant research documents on its web site - www.milk.co.uk. So, the belief that having a cream cake improves your mood may well have a scientific base. Cream and butter are very close to the milk components we are designed to digest, and naturally contain Vitamins A and D which have to be added to hydrogenated vegetable oil margarines.
